Breakfast Recipe: Poha

Chef Deepa Suhas Awchat, CEO, Goa Portuguesa & Diva Maharashtracha gives her recipe of traditional Maharashtrian Poha



Ingredients:
2 cups beaten rice (Fou)                          
I medium finely chopped onion             
2 green chillies, slit            
1 medium boiled & peeled  potato                 
¼ cup boiled green peas                                 
4 tsp grated coconut                           
¼ tsp Sugar                                     
Salt to taste   
1 tsp turmeric powder         
¼ tsp red chilli powder
1 tsp mustard seed
6 curry leaves                                   
1 tbsp coriander leaves                      
2 tbsp refined oil   
                                    
Method:
Wash beaten rice and squeeze out the excess water. Apply sugar & salt to it & keep aside for 5 min. Cut potato into ½ inch cubes and keep aside.
Heat oil in a pan, add mustard seeds & curry leaves. When seeds splutter add finely chopped onion & green chilies. Add red chilli powder and turmeric. Saute onion till it changes colour.
Add potato pieces & green peas to it & sauté well for 2 min.
Add beaten rice to it & toss till it mixes well.
Add grated coconut and garnish it with chopped coriander leaves.
 Serve hot.
