Tri-Coloured Cupcakes:Republic Day Special

This year, embrace Republic Day in a modern avatar by trying your hand at these colourful cupcakes by Mumbai based gourmet baker, Ayushi Shah


For the cupcakes

Ingredients
250g flour
50g cocoa powder
200g condensed milk
1 tsp baking powder
1/2 tsp baking soda
1/2 cup soft butter
100ml water

Method
1. Sift dry ingredients together.
2. Combine flour, condensed milk, and water in a bowl and whisk well. 
4. Line 12 mini cupcake tins with cupcake lines and fill until half full. Bake for about 10-12 minutes (or until a tester comes out with moist crumbs stuck to it) in a preheated oven at 180 degrees celcius. 
5. Remove, de-mould, cool.

For the Butter Cream

Ingredients
100g salted yellow butter
200g icing sugar, seived
Green and ornage gel colours

Method
1. Whip butter until pale yellow.
2. Add the icing sugar in three additions and whisk well, untill smooth and you have a pipable consistency.

3. Divide the mixture into 3 bowls. Add green gel colour with a tooth pick in one bowl and orange in another. Mix both well. Make sure you use a little colour, more can be added later.
4. Pipe 4 cupcakes with the green buttercream icing, 4 with the orange and 4 with the white. 
5. Use blue sprinkles and top with the white iced cupcakes.

What we reviewed- Opening a gastropub in a city where everyone loves their liquor can be quite daunting, but The Chatter House’s excellent ambiance along with some cunning concoctions impresses the city’s party-goers with flair. The light bites are perfect to go with drinks with food varieties ranging from heavy burgers to spicy seekhs. We suggest, choose your drink and then head to the food, as the gastro pub has no dearth of both to keep up with your Friday night party!

Healthy, innovative and easy to prepare salads

There's more to salads than just tossing together some fruits and veggies with salad seasoning. A range of never-heard before ingredients, including super foods have made way into salad recipes to add a dash of nutrition to this health-conscious preparation. Listed are two simple salad recipes by PVR Mistral, Vasant Kunj, New Delhi

Vegetarian Quinoa Salad



Ingredients
·         Blanched quinao seeds 120 gms
·         Brunoise Green beans 40 gms
·         Brunoise  bellpeppers 40 gms
·         Toasted pine nuts 10 gms
·         Brunoise red Onion 20 gms
·         Sumac powder 1 Tea spoon
·         Zatar powder 1 Tea spoon
·         Chopped garlic 2 pinch
·         Chopped parsley  ½ Tea spoon
·         Lime juice  ½  Tea spoon
·         Extra virgin olive oil 2 Tea spoon
·         Salt & pepper to taste

Method
·         In a saucepan bring water to a boil. Add quinoa and a pinch of salt. Reduce heat to low, cover and simmer for 14 minutes. Allow cooling to room temperature; fluff with a fork.
·         Meanwhile, in a large bowl, combine olive oil, sea salt, sumac powder, zatar powder, chopped garlic, lemon juice, brunoise green bean, bell pepper, red onion, and chopped parsley. Stir in cooled quinoa.
·         Add salt & pepper to taste.
·         Garnish with toasted pine nuts. 

Grilled Chicken Salad




Ingredients
·         Chicken thigh bone less 160 gms (without skin)
·         Char grilled zucchini 50 gms
·         Char grilled asparagus 50 gms
·         Red pepper 40 gms
·         Grilled onion ring 20 gms
·         Cherry tomato 4-5 no
·         Snow peas 3-4 no
·         French beans 3-4 no
·         Mix lettuce  40 gms
·         Sisame oil  ¼ Tea spoon
·         Orange juice reduction 8ml
·         Sisame seeds  ½  Tea spoon
·         Extra virgin olive oil 2 Tea spoon
Salt & pepper to taste  

Method
·         Preheat the grill for high heat.
·         Lightly oil the grill grate. Place chicken on the grill, and cook 6 minutes per side, or until juices run clear. Remove from heat and slice.
·         In a large bowl, add mix lettuce, cherry tomato, French beans, snow peas, grilled asparagus, zucchini and bell peppers.
·         Then tossed with sesame orange dressing (sesame oil, orange reduction, toasted sesame seeds, extra virgin olive oil, salt & pepper)
·         Top with the shredded grilled   chicken, grilled onion rings and tossed sesame seeds.

What to order-  Many many dishes have been named after renowned food critics or chefs of he country. The menu is 50% vegetarian and features all freshly prepared Asian delicacies with a Ritu Dalmia twist. Do try the Bomra's Tomato Salad, Roti Bawang and the Jaggery creme brulee. 


What to do around-, Since the kitschy elements of the restaurant come from the downstairs store, Kitsch by Priya and Charu Sachdeva, you can probably pick up an artifact or two before your table is ready

What we reviewed - Probably when queen of Italian khana opens a restaurant, connoisseurs must be the first to line up to try her venture into the Asian kitchen. Diva kitsch combines ingredients from the entire continent and more so from lesser knows cuisine like Myanmar, Vietnam and Malaysia, and wonderfully presents them in a single platter. Almost all dishes suit the palate as the food is no different from our cuisine, or to put it lightly, is like dining with your own neighbours. The staff is knowledgeable and friendly and you can see the chef's dexterity with the dishes and the use of freshly imported ingredients. Since the liquor licence isn't in yet, guests might have to wait a little before bringing their party to this Asian eatery!

Want to eat- Pizzas, pastas, sandwiches, etc etc. They thrive on their wood-fired thin crust pizzas, which has never been brought into the limelight

Where to go-  Flip Bistro; any of its various outlets across Delhi and Gurgaon

What to wear- Casuals since the ambiance is of a laid back and relaxed cafe

Whom to go with- Anybody, the place doesn't serve alcohol making it ideal for a family dinner or a sober evening with friends


What to order- The food is strictly okay and extravagantly over-priced. There are various better options in South Delhi which serve better pizzas, pastas and salads at a more affordable price. 

What's for dessert?- They have good pancakes and a decent red velvet cake, which you can order. But it is hard to wrong with a red velvet classic, right?


Cost for 2- 2000 (excluding taxes)

What we reviewed - I haven't come across many restaurants in Delhi which serve you water in plastic cups while the keeping their prices are sky high. There is nothing extraordinarily special about the preparations which you will not find in any other restaurant of Delhi. The place has no USP apart from the lousy service and uninformed staff. The staff forgot to bring us water, even forgot to take our order and even took 10 minutes to bring the bill. Perhaps they want to establish the restaurant as a cafe where youngsters can come, sit, talk and leave without ordering anything. If that's their motto, then kudos to that!

Because Delhi can do a Mumbaiyya pav bhaji, and how!

Want to eat- Chaat, pav bhaaji, samosas, all things which make your tummy go mmmmmmm

Where to go-  Om Sweets, Raj Nagar, Ghaziabad

What to wear- It's your typical next door chaat corner, and the crowd it draws comprises people you have grown up with, so wear whatever you are comfortable in

Whom to go with- Friends, family and especially out-station relatives

How to get there- OK, this is tricky. Ghaziabad is not well connected by metro so you will have to get down at Vaishali and look for an auto/bus which drops you there. The best way to go would be in your own vehicle

What to order- The golgappas and pav bhaji. The chaat is typical of the one served in UP, the state which rules the roost in chaat specialities AND the pav bhaji. Never before have I eaten a better pav bhaji than this in Delhi

What's for dessert?- You can opt for sweets on the counter or piping hot jalebis and imartis. On a cold winter evening, we preferred the latter, ofcourse.

What we reviewed- Seriously, one of the best chaats I have had in a filled-with-chaat-stalls city of Delhi, the place is the neighborhood's pride with its dirt cheap rates and lip smacking food. For a taste of the street food which throngs UP, this is the best place to head to
